Made with Nurture Ranch Grass Fed Beef Short Ribs.
Serves four
Ingredients
1) 1 pound Nurture Ranch beef short ribs
2) 1 teaspoon sea salt
3) 1/2 teaspoon ground black pepper
4) 2 tablespoons all-purpose flour
5) 1 tablespoon olive oil (Recommend Carapelli Organic Extra Virgin)
6) 1 tablespoon butter
7) 1 onion, sliced
8) 1 clove garlic
9) 1 (12 fluid ounce) can or bottle stout beer (Recommend Guinness)
10) 1 cup beef stock
Directions
1) Season short ribs with sea salt and pepper, then dredge in flour until coated.
2) Heat olive oil and butter in a large skillet or Dutch oven over medium-high.
3) Brown ribs on each side, 5 minutes per side.
4) Remove from the skillet and set aside.
5) Add onion and garlic to skillet; cook and stir 5 minutes until onion is tender.
6) Return ribs to skillet and pour in beer. Stir, scraping the bottom of pan, until all browned bits have mixed with the liquid. Pour in the beef stock, cover and simmer over low until very tender, about 2 hours.
7) Serve with mashed potatoes, carrots and asparagus.
