Nurture Steak Fajitas

Serves 4

Ingredients

1)     1 lb Nurture Ranch Flank Steak

2)     2 TBSP olive oil (recommend Carapelli Organic)

3)     1 large onion, peeled and sliced.

4)     2 bell peppers sliced into long strips (red & green)

5)     Sea salt

6)     Flour Tortillas

7)     Shredded cheese

8)     Shredded lettuce

9)     Salsa of choice,

10)   Sour cream

11)   Guacamole

Marinade

1)     Juice of 1 lime

2)     2 Tablespoons of olive oil

3)     1 garlic clove minced

4)     One Jalapeño pepper finely chopped

5)     1/4 cup chopped fresh cilantro

Directions

1)    Marinate steak: Mix marinade ingredients. Coat steak with the marinade and let it sit at room temperature for one hour. Wipe off marinade before cooking.

2)    Wrap tortillas in foil, place in oven on low heat  

3)    Sear steak on both sides: Set large cast iron pan over high for 2 minutes. Add oil and heat for an additional minute. Add the steak, frying on each side for 3 minutes. Remove from pan and let sit, tented with foil, for 5 minutes.

4)    Cook vegetables while meat is resting. Add more oil and  onions and bell peppers. Sear for 1 minute, then stir every 30 seconds for 5 minutes.

5)    Slice steak across grain at an angle in thin slices.

6)    Serve immediately on warm tortillas, shredded cheese, shredded lettuce, salsa, sour cream and guacamole.
