Nurture Italian Meat Bells
30 minute prep, 45 minute cook time
Serves 4
Tip – prep in advance and store in refrigerator to save time. Place in oven 45 minutes before meal.
Ingredients
4 bell peppers, halved and seeded - Green, Orange, Red, or Yellow
1 (1 pound) Nurture Burger (recommend ground brisket)
1 cup white rice
1 egg
1/2 cup of Italian bread crumbs
1 tablespoon olive oil (recommend Carapelli Organic)
1 small onion, chopped
2 cloves garlic, minced
10 pitted green olives, chopped
1 tablespoon of capers
2 tablespoons extra virgin olive oil (recommend Carapelli)
½ teaspoon basil
½ teaspoon oregano
1/2 teaspoon ground black pepper
1/2 teaspoon crushed red pepper flakes
1 (15 ounce) can tomato sauce
1/4 cup grated Parmesan cheese
Directions
1 Preheat oven to 375 degrees.
2 Place peppers in a greased baking dish; set aside.
3. Cook Nurture Burger in light olive oil.
4. Cook rice.
4 Heat oil in a large heavy skillet over low heat. Saute onion until translucent, then stir in garlic. Let garlic cook for 2 minutes, then stir in bread.
5 Add Nurture Burger, egg, rice, olives, capers, olive oil, black pepper and red pepper. Mix until well blended.
6 Mound pepper halves with stuffing. Surround peppers with tomato sauce and a small amount of water. Cover with foil.
7 Bake in preheated oven for 45 minutes, or until peppers are tender. Uncover for the last 15 minutes of baking, and baste occasionally with sauce.
8 Place on plate and top with Parmesan cheese
